While it definitely is possible, the problem is that mental breakdowns usually don't start after head trauma until years later. It doesn't start days to weeks later as what was shown in RDR2. It's possible it caused Dutch's irrational decisions in RDR1, but definitely not the parts of RDR2 when Arthur was still alive.

Nope, not really. There has never been any solid proof of Mexico ever being meant to be visited by Arthur or John. There were a few cut contents zones from when the game was in development.
